Homemade Tomato Soup

Chop about one inch off the top of your garlic head, exposing the garlic right side up in the center of your pan, scatter around the tomatoes, onions, herbs, salt and pepper. Drizzle ingredients with balsamic and olive oil. Bake for one hour. (Baking the tomatoes will help rid of the acidity).

Step 2: Bring the soup to life. Once the hour is up, pull your sheet out of the oven and let cool before handling. In the mean time, get out a large blender. When ready, pour all of the ingredients besides the garlic, into the blender. The garlic will need to be squeezed out of its shell and into the blender. Blend on low until fully incorporated.

Step 3: Simmer away. Pour your blended ingredients into a large simmer pot along with your broth. Stir and let simmer. This is when you can decide whether or not you need more salt or pepper to taste. Let it cook for about 20 minutes with the lid on, stirring occasionally. The ingredients will start to mingle together into that homemade soup you’re looking for.

Step 4: Cream it up. Add the heavy cream to the soup and stir it in until everything is beautifully combined. If you like your soup extra creamy, feel free to add a little more! Taste the soup and adjust the seasoning with salt and pepper if needed.
