Ingredients:

1 ¾ cups all-purpose flour
1 ½ cups granulated sugar
¾ cup unsweetened cocoa powder (preferably Dutch-processed)
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup whole milk (or buttermilk for extra richness)
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
2 cups fresh strawberries, pureed (see tips)
1 cup sliced strawberries for garnish
For the Whipped Frosting:
1 cup heavy whipping cream
½ cup powdered sugar
2 teaspoons vanilla extract

Instructions:
Step 1: Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line them with parchment paper.
In a large mixing bowl, combine dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk everything together until it’s well mixed.
In another bowl, whisk the wet ingredients: eggs, milk, oil, and vanilla extract. Once mixed, slowly add the wet ingredients to the dry ingredients and stir until smooth.
Gradually pour in the boiling water to the batter. This makes the batter thinner, but it’s essential for the moist texture of the cake.
Pour the batter evenly into the prepared cake pans.
Step 2: Bake the Cake
Bake the cake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
While cooling, make the pureed strawberries. You can puree fresh strawberries in a blender or food processor to create about ½ cup of strawberry puree. This will add moisture and flavor to the cake.
Step 3: Make the Whipped Frosting
In a large mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Beat using an electric mixer on medium-high speed until soft peaks form.
Gently fold in 2 cups of the strawberry puree until fully incorporated. Be careful not to overmix, or the whipped cream could deflate.
Refrigerate the frosting for 10–15 minutes before using to help it firm up and make spreading easier.
Step 4: Assemble the Cake
Once the cakes are completely cooled, place one cake layer on your serving plate or cake stand.
Spread a generous layer of the whipped strawberry frosting on top of the first cake layer followed by a thin layer of pureed strawberries.
Place the second cake layer on top, and frost the top and sides of the entire cake with the remaining whipped frosting. Use a spatula to smooth the frosting and create a beautiful finish.
Garnish the cake with fresh strawberry slices for an extra burst of color and flavor.
Step 5: Serve and Enjoy!
Let the cake chill in the refrigerator for 15–20 minutes to allow the frosting to set before cutting and serving.
